Walnut galette with blueberries

ΕΚΤΕΛΕΣΗ
Dough
Βήμα 1
Place 75 g walnuts into mixing bowl and grind 10 seconds/speed 8.

Add 300 g flour, 120 g butter in pieces 3 cm, 2 tablespoons sugar, 1/2 teaspoon salt, 1/2 teaspoon ground cinnamon, 45 g cold water and mix 30 seconds/speed 4.5.

Shape dough into a ball and flatten into a thick disk (15 cm diameter), cover with cling film and refrigerate for 1 hour.
Filling

Place 35 g almonds into mixing bowl and grind 10 seconds/speed 8. Transfer to a bowl and set aside.

Place 300 g blueberries, 25 g corn flour, 2 teaspoons lemon juice and 40 g sugar into mixing bowl and mix 35 seconds/reverse/spoon speed. Transfer to a bowl and refrigerate until needed.

Pre-heat oven to 180 C.
Βήμα 4
Remove cling film from dough and place on baking paper. Cover dough with another piece baking paper and roll out with the aid of rolling pin into a 32-33 cm disk. Transfer with baking paper to baking tray. Remove baking paper from top.

Sprinkle ground almonds in center of dough and cover with the blueberries mixture you have set aside, leaving a 5 cm border empty. Fold edges over fruit towards the centre, overlapping slightly for a crimped effect and leaving the centre uncovered.
Finishing and baking

With the help of a pastry brush, brush dough with 10 g milk and sprinkle with some sugar.

Bake in pre-heated oven 180 C for 40 minutes.

Serve hot with a scoop of vanilla ice-cream.

Pastry can be refrigerated for 2-3 days or frozen for 1 month. Make the dough in advance for a quick last-minute dessert.
