Place 150 g cashews and grind 40 seconds/speed 6. Scraped own sides with the aid of spatula.

Add 75 g maple syrup, 1 tablespoon coffee dissolved in 30 g water and mix 20 seconds/speed 4. Scrape down sides with the aid of spatula.

Set speed 3, very slowly pouring 80 g coconut oil onto mixing bowl lid letting it trickle into mixing bowl to emulsify. transfer in a bowl and refrigerate.

Pre-heat oven at 180C. Grease with coconut oil a rectangular cake tin (25cm) and set aside.

Place 150 g walnuts into mixing bowl and chop 3 seconds/speed 5. Transfer in a bowl and set aside.

Place 70 g dates, 60 g coconut oil, 200 g coconut milk, 225 g flour, 100 g brown sugar, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1 tablespoon instant coffee dissolved in 50 g water and mix 30 seconds/speed 5.

Add 100 g chopped walnuts and mix 10 seconds/speed 4.5

Transfer mixture into cake tin and bake in pre-heated oven (180C) 35-40 minutes.

Allow 10 minutes for the cake to cool down and remove cake from tin. Meanwhile proceed with coffee syrup.
Coffee syrup

Place 80 g sugar into mixing bowl and grind 10 seconds/speed 10.

Add 30 g water, 1 tablespoon instant coffee dissolved in 20 g water and heat 15min/115C/speed 2.

Pour hot coffee syrup onto cold cake and set aside to absorb completely. Cover with frosting and garnish with remaining 50 g walnuts.
