Put in the mixing bowl 130gr raw unsalted cashews and mix

Add in the mixing bowl 130gr peanut butter, 30gr maple syrup, 30gr coconut oil, 15gr water, 30gr coconut flour and mix

Scrape down the sides with the aid of spatula and mix again

Put parchment paper in a loaf tin and put inside the base you just made. Press down with the help of a spoon to create an even surface.

Put the loaf tin in the freezer until you prepare the filling.
FILLING

Put in the mixing bowl 125gr pitted dates, 65gr peanut butter, 25gr almond milk, 1 teaspoon vanilla extract, 1/4 teaspoon salt and 30gr hot water. Mix

Scrape down the sides with the aid of spatula and mix again

Remove loaf tin from the freezer. Put the filling above the base and even the surface with the help of the spoon.

Sprinkle on top 50gr roasted, unsalted peanuts and press them softly with a spoon so that they insert the filling a little bit. Put the loaf tin back in the freezer for at least an hour. In the meantime wash and dry mixing bowl.
GARNISH

Remove loaf tin from the freezer and pull out the bars from the loaf tin. Then place on a chopping board. Slice into 10-11 small bars. Put them back in the freezer.

Start removing from the freezer a couple of bars at a time and dip them in the melted chocolate. (Read notes)

Put them on a plate with parchment paper and put them in the fridge. Slowly do this until you cover all chocolates. Leave them in the fridge for an hour so that the chocolates firm up.

Store in the fridge, in an airtight container for 3 weeks or freezer in zip bags. Defrost 1 hour before or eat half frozen.
ΣΥΜΒΟΥΛΕΣ

1. The reason we remove bars from the freezer a couple at a time its because we dont want them to soften. It will make the procedure of garnishing more difficult. So for safety we remove a couple at a time. Dip them in the dark chocolate and then put them in the fridge.
2. If the chocolate starts firming up while you dip the bars in, then warm it again to melt and continue with dipping the rest bars.

ΠΑΡΑΛΛΑΓΕΣ

1. You can dip bars in melted chocolate in a different way. Use a wiring rack. Put on top all bars and then pour melted dark chocolate on top of the bars. As soon as the chocolate firms up turn them around and pour the rest of the melted chocolate on the other side of the bars.
