Preheat oven at 200 °C, and grease a square heatproof oven dish ( 30 cm x 30 cm) and set aside. Place 150 g carrots, cut into pieces, 250 g portobello mushrooms, cut into pieces and 200 g white mushrooms, cut into slices into mixing bowl and with aid of spatula chop 7 sec/speed 5. Transfer into a bowl and set aside.

Place 100 g red onion, quartered, 2 garlic cloves and 40 g olive oil into mixing bowl and chop 5 sec/speed 5.

Add 3 thyme sprigs, leaves only, 10 g parsley sprigs, leaves only, 1 tsp ground pepper, 1.5 tsp salt and 50 g red wine and steam 7 min/Varoma/reverse mode/speed 3

Add 100 g sundried tomatoes, halved and 1.5 tsp truffle oil and mix 10 sec/reverse mode/speed 3. Transfer into a bowl and set aside. Clean mixing bowl.

Pasta

Place 1500 g water, 1 tbsp homemade vegetable stock and 1 pinch salt and boil 15 min/100°C/speed 1.

Add 500 g pasta through hole in mixing bowl lid and, without measuring cup, cook time indicated on packet/100°C/reverse more/speed 1.

Drain in Varoma dish and rise under tab water. Transfer into a bowl and set aside.
Béchamel sauce

Place 1500 g almond milk, 150 g corn flour, 1 tsp salt and 1/3 tsp ground nutmeg into mixing bowl and cook 10 min/100°C/speed 4.

Assembly

Place 1 tsp of ground mint, ½ teaspoon of ground cinnamon, 10 heaped spoons of béchamel and mix. Put 1/3 of the pasta in the prepared dish. Add the sauce and spread evenly over the pasta. Add some béchamel again, top with the remaining pasta and cover with the remaining béchamel. Bake for 35-40 minutes (200°C) or until golden brown.

Allow the pasticcio to cool before cutting into portions and serving.
ΣΥΜΒΟΥΛΕΣ

You can add vegetarian parmesan to the béchamel and mix it in before you put the spaghetti in the oven.
