A VEGAN VERSION OF A CHEESECAKE WITH A BASE AND FILLING OF INTENSE FLAVOUR OF OUR FAVORITE VEGAN OREO COOKIES!

ΕΚΤΕΛΕΣΗ
VEGAN OREO CHEESECAKE
Βήμα 1
Put 400gr raw unsalted cashews in a big bowl and cover them with water for 4 hours. Leave them aside until you need them.
BASE

Put parchment paper on a springform cake pan with a diameter of 23cm approximately.

Put 25 oreo cookies in the mixing bowl and crush

Add in the mixing bowl 25gr melted coconut oil and mix

Put the mixture in the springform cake pan and create an even surface with the back of a spoon.

Put the springform cake pan in the freezer for half an hour approximately. In the meantime continue with the filling.
FILLING

Use 2 bowls. Scrape the filling from 14 sandwich cookies and reserve both the filling and cookies in the 2 separate bowls.

Put in the mixing bowl the black part of all the cookies you just separated and crush. Then put them back in the bowl until you need them.

Put in the mixing bowl drained cashews and crush

Scrape down the sides with the aid os spatula and mix again

Add in the mixing bowl cookie cream filling you left aside and mix again

Add in the mixing bowl 30gr maple syrup, 2 tablespoons of lemon juice and the thick part of coconut cream from a tin. Thick part should weigh approximately 180gr. Mix

Add in the mixing bowl 70gr of crushed oreos you left aside. Mix

Remove springform from the freezer. Smooth out half of the filling which is in the mixing bowl over the bottom. Crumble some of the remaining scraped cookies on top, then smooth out remaining filling over it. In the end sprinkle on top all left crushed oreos. Put in the freezer for an hour at least before you serve.
ΣΥΜΒΟΥΛΕΣ

Put coconut cream in the fridge for at least 3 hours so that the tick part separates from the liquid part. Do not shake before you open the tin. Use only the thick part for this recipe. You can use the liquid in smoothies!
