VEGAN LASAGNA WITH A VEGGIE AND MUSHROOM FILLING TOPPED WITH VEGAN BECHAMEL!

ΕΚΤΕΛΕΣΗ
TOPPING
Βήμα 1
Put in the mixing bowl 80gr bread torn in pieces and chop

Put the breadcrumbs in a small bowl and leave aside.
FILLING

Put in te miximg bowl 180gr brown onions cut in 4, 1 garlic clove, 30gr olive oil and chop

Scrape down the sides with the aid of spatula and saute

Put in the mixing bowl 180gr carrots cut in small pieces, 130gr zucchini cut in small pieces and 300gr aubergines cut in little pieces. Saute

Add in mixing bowl 300gr mushrooms cut in thin slices, stir with the aid of spatula and then saute

Put in the mixing bowl 1 vegetable stock, 560gr chopped tomatoes, 1 tablespoon salt, 1/2 teaspoon pepper, 1/2 teaspoon turmeric, 1 teaspoon dried oregano and stir with the spatula. Then cook

Put the mixture in a big strainer and leave aside so that excess liquid is drained.
VEGAN BECHAMEL

Put in the mixing bowl 60gr margarine and melt (if you use sunflower oil, you dont need to melt it. You can proceed to step 2)

Add in the mixing bowl 170gr wholewheat flour and saute

Put in the mixing bowl 1 liter oat milk, 1 tablespoon salt, 1/2 teaspoon pepper, 2 teaspoons brown sugar, 1/2 teaspoon nutmeg and 15gr nutritional yeast. Cook

ASSEMPLY
Βήμα 1
Pre heat oven to 180 degrees.
Βήμα 2
Use a rectangle baking tray 30X25cm baking tray. Put on the bottom some of the mixture filling you left aside with a spoon. Lay so that the filling is spread all over the baking tray. Then lay on top a layer of lasagna. Then put a layer of the filling and again on top a layer of lasagna. Then put some filling again and finally a last layer of lasagna. Spread evenly on top vegan bechamel.

Sprinkle on top breadcrumbs you have left aside.

Bake in the oven for 45-50 minutes.

Let it cool slightly before you cut in pieces.
ΠΑΡΑΛΛΑΓΕΣ
1. Instead of nutritional yeast in bechamel, you can use 50gr grated vegan parmesan or 50gr grated vegan halloumi cheese.
2. Instead of breadcrumbs on top you can sprinkle any vegan cheese of your choice.
