VEGAN CARROT CAKE

I HAVE MADE SOME CHANGES AND THIS IS THE NEW ONE! TRY IT OUT!

VEGAN CARROT CAKE
Βήμα 1
Pre heat oven to 170 degrees and grease and flour a springform.

Put in the mixing bowl 200gr hazelnuts and walnuts. Crash

Put 150gr of the nuts in a bowl and the rest 50gr in another bowl. Leave aside.

Put in the mixing bowl 300gr carrots cut in pieces and crash
- 1 δευτ.

Repeat the procedure twice. In total 3 seconds with turbo speed. Then put the carrots in the big bowl with the 150gr of crashed nuts.

Put in the mixing bowl 150gr brown sugar, 100gr coconut sugar, 1 teaspoon salt, 1 heaped tablespoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon ground ginger, 1 teaspoon vanilla extract, 130gr rum, 155gr sunflower oil, 260gr lukewarm water and mix

Add in the mixing bowl 500gr whole wheat flour, 3 heaped teaspoons baking powder and mix

Repeat this procedure twice. In total 3 seconds on turbo speed.

Add in the mixing bowl the mixture with the carrots and crashed nuts you left aside and stir well with the spatula.

Put in the springform the mixture. Sprinkle on top the crashed nuts in the small bowl you left aside.

Bake in the oven on 170 degrees for 45 minutes. Turn off the oven and leave the cake in the oven for another 5 minutes. Then remove from the oven and let it cool down completely before you remove it from the springform. You can sprinkle on top with powdered sugar,
ΠΑΡΑΛΛΑΓΕΣ
1. You can use any nuts you prefer.
2. You can replace whole wheat flour with plain flour.
3. Instead of coconut sugar you can use white sugar.
4. Instead of rum you can use cognac.
