A REFRESHING TART WITH A VARIETY OF BERRIES AND AN EXCELLENT HEALTHY BASE WITH NO COOKIES, BUT DATES AND DRIED NUTS!

ΕΚΤΕΛΕΣΗ
TART BASE

Put in the mixing bowl 160gr pitted dates, 100gr almond flour, 100gr oat flakes, 1 tablespoon vanilla extract, 30gr dessicated coconut, 25gr melted coconut oil, 10gr cacao powder and 1 teaspoon salt. Mix

Put the mixture in a round tart pan 20-22cm approximately. Press the mixture down firmly and up the sides to create an even tart shell. Put the pan in the fridge until you prepare the filling.
FILLING

Put in the mixing bowl 450gr mixed berries and mix to create a puree.

Put the mixture in a bowl and leave aside.

Put in the mixing bowl 10gr agar agar powder, 400gr coconut cream, 15gr corn flour, 80gr maple syrup, 1 teaspoon vanilla extract and 15gr coconut oil. Select the option THICKEN and cook

As soon as the cream is ready add in the mixing bowl the berries you have left aside. Stir with the aid of spatula and then mix

Put the filling over your base and return it in the fridge to firm up. Start the procedure with the garnishing with dry nuts.
GARNISH

Pre heat oven to 180 degrees and put parchment paper on a baking tray.

Put in the mixing bowl 20gr maple syrup and a pinch of salt. Cook

Add in the mixing bowl 70gr raw unsalted hazelnuts, 70gr raw unsalted pecan nuts and cook again

Then lay all nuts on the baking tray and roast in the oven for 12 minutes.

Remove from the oven and let them cool down

Add them in the mixing bowl and crush

Lay all nuts on the tart.

Put the tart pan back in the fridge and let it cool for another hour.

You can also garnish with some dark chocolate couverture.

Put in the mixing bowl 50gr dark chocolate couverture in pieces and cut

Scrape down the sides using the aid of spatula and add in th mixing bowl 5gr coconut oil. Melt

Garnish the tart with melted chocolate.

Put it back in the fridge for half an hour so that the chocolate hardens. Ready!
ΣΥΜΒΟΥΛΕΣ

1. Before you start making the recipe you can roast dessicated coconut in the oven for 10 minutes on 180 degrees. It gives a nice flavor for the base.
2. You can buy frozen mixed berries and let them thaw for 1-2 hours before you use them. Weigh them after they are thawed.
3. For garnishing you can use anything you prefer. Other nuts, fresh berries, or just dark chocolate.
