Preparation
Βήμα 1
Place 1 teaspoon mastic gum grains, 1 teaspoon mahlepi grains, 1 level tablespoon sugar and 1 level tablespoon village flour into mixing bowl and grind 20 sec/speed 10. Divide the mixture in 2 small bowls and set aside.

Place 15 g fresh mint leaves into mixing bowl and chop 3 sec/speed 5. Transfer to a bowl and set aside.

Filling

Place 250 g flaouna cheese cut into pieces into mixing bowl and grate 10 sec/speed 8. Transfer to a large bowl and set aside.

Place remaining 250 g flaouna cheese cut into pieces, into mixing bowl and grate 10 sec/speed 8. Transfer to the bowl with grated cheese and set aside.

Place the bowl of grated cheeses on mixing bowl lid and weigh inside 100 g anari cheese, fresh, salted, crumbling it as you go . Also weigh inside bowl of grated cheeses 175 g sultanas and 40 g village flour. Add 1 tablespoon sugar, the grated mastic/mahlepi mixture from one of the bowls you have set aside and mix well by hand. Add 4 eggs, knead well with your hands and set aside to rise until dough is ready.
Dough

Place 120 g pastry butter, soft, room temperature, 500 g village flour, 100 g semolina, 12 g baking powder, the remaining mixture of mastic/mahlepi you have set aside, 1/2 teaspoon salt, 180 g freshly squeezed orange juice, 100 g water and 40 g olive oil into mixing bowl and set Dough/3 min. Transfer to a bowl, cover with cling film and set aside.

Assembly & baking

Preheat oven to 180 °C. Cover a baking tray with baking paper and set aside.

Place a plate onto mixing bowl lid and weigh inside 160 g filling mixture. Shape into a ball and set aside. Repeat with remaining mixture until you have 8 balls of filling. Place them back in the bowl and cover with cling film.

Place in a small bowl, 1 egg and 2 tablespoons sesame seeds, beat with a fork and set aside.

Divide dough into 8 pieces, each weighing 137 g, shape into balls, place back in the bowl and cover with cling film. With a rolling pin, roll each ball into a disc 15-16 cm wide. Place each disc on a plate covered with sesame seeds and place 1 ball of filling in the center. Brush the sides around the filling with the beaten egg and sesame so they can secure more easily and fold the sides inwards to form a square. Place the parcels in the prepared baking tray, leaving 3 cm distance between them, and, using a pastry brush, brush the whole surface of the parcels with the beaten egg and sesame. Bake in a wood oven or a home oven (180 ° C) for 40-45 minutes or until golden.

Transfer to a wire rack, allow to cool completely and cover with a kitchen towel until served.
