This cake is so simple to prepare and so delicious.

Thermomix carrot cake is the perfect afternoon treat. Either for a birthday party, a simple friends gathering or a special dessert after dinner !!

PREPARATION
Carrot Cake

Preheat the over to 180 Celsius

Line two 20 cm round cake tins with grease proof paper to split the batter in half

Place the hazelnuts in the mixing bowl. and mix Place in separate bowl.

Put the carrots in mixing bowl and mix. Place in the same bowl with hazelnuts

Insert the butterfly whisk and add the eggs, sugar and vegetable oil and mix

Remove the butterfly whisk add the carrots-hazelnuts and mix

Add the flour, baking powder, soda and salt and mix

Split the batter between the 20 cm tin. Cook for 30 min-40 min and allow the cakes to cool on a wired rack completely.

To make the cream cheese icing, place the butter in the mixing bowl and mix

Insert butterfly whisk and add the cream cheese and mix adding also the icing sugar through the lid

To assemble the cake place one base on a serving plate. Spread over the 1/2 icing, then top with the other cake and spread over the remaining icing. I also had marzipan orange and I cut out carrot shapes. Also i sprinkled on the top more hazelnuts. Enjoy
