ΕΚΤΕΛΕΣΗ
Chocolate pastry dough

Grease a fluted tart pan (Ø 24 cm) and set aside.

Place 50 g roasted hazelnuts, 50 g caramelized almonds, 65 g sugar and 50 g cocoa into mixing bowl and grind 10 sec/speed 10.

Add 125 g butter, cut in pieces, 1 egg, 150 g all-purpose flour and 5 g into mixing bowl and set Dough/2 min. Transfer dough between 2 baking papers, with 1 cm thickness and place into fridge for 30 min.

Roll out dough with a rolling pin, to 0.5 cm thickness and cover the base and the sides of the fluted tart form with the dough (see tip). Transfer into the fridge again until the frangipane is prepared. Meanwhile, preheat oven to 170°C.
Chocolate frangipane

Place 150 g roasted hazelnuts, 50 g caramelized almonds, 50 g sugar, 100 g chocolate, cut in pieces and 60 g flour into mixing bowl and grind 10 sec/speed 10.

Add 100 butter, cut in pieces and 1 egg and mix 30 sec/speed 10.

Transfer fradgipane onto dough reserved dough and spread evenly with spatula. Bake for 30-35 min (170°C). When baking time ends, set aside to cool for at least 30 min.
Chocolate pastry creme

Place 125 g milk, 250 g fresh creme, 1 egg, 40 g corn flour, 1 tsp vanilla sugar and 50 g sugar into mixing bowl and mix 10 sec/speed 10.

Then, place simmering basket instead of measuring cup onto mixing bowl lid and heat 10 min/100˚C/speed 3.

Αdd 150 g chocolate, cut in pieces and mix 30 sec/speed 10. Transfer creme into baked, cooled, dough with frangipane, garnish with coarsely chopped almonds and strawberries. Refrigerate to set before serving.

You can save the dough that will be left over from the tart and bake it in the oven to garnish the tart at the end.

ΠΑΡΑΛΛΑΓΕΣ

– Instead of caramelized almonds, you can use roasted almonds in the pastry dough.
– For the garnish, you can use roasted almonds or pistachios instead of caramelized almonds.
– You can replace the berries with other forest fruits plain red or dipped in chocolate.
