ΕΚΤΕΛΕΣΗ
Dough
Βήμα 1
Place 250 g blanched almonds, 125 g dried coconut, 75 g village flour and 200 g sugar into mixing bowl and grind 15 sec/speed 10.

Βήμα 2
Add 70 blossom water, 180 g water and set Dough/3 m with aid of spatula. Transfer dough to a bowl, cover with clingfilm and refrigerate for 4 hours. Meanwhile, continue with the recipe for ganache.

Ganache

Place 180 g dark chocolate cut into pieces into mixing bowl and grind 8 sec/speed 5.

Add 120 g milk and melt 4 min/60 C/speed 2. Transfer to a bowl, cover with clingfilm and refrigerate to set.

Assembly
Βήμα 1
Transfer dough to a work surface and knead a little by hand. Divide dough into 12 equal pieces and shape into balls.
Βήμα 2
Place each ball into the palm of your hand and, with the index finger of the other hand, press the ball lightly in order to create a wide hole in the centre. Fill the hole with 1 tablespoon ganache and close the dough over the filling. Press the filled ball lightly between the palms of your hands to flatten slightly and transfer to a serving platter.

Sprinkle them all with 100 g icing sugar and serve.
