SWEET POTATO LASAGNA
VEGAN LASAGNA WITH SWEET POTATO INSTEAD OF LASAGNA. FILLED WITH QUINOA AND CHICKPEAS. TOPPED WITH VEGAN BECHAMEL!

ΕΚΤΕΛΕΣΗ
SWEET POTATO LASAGNA
Βήμα 1
Preheat oven to 200°C. Line 2 baking trays (30 x 40 cm) with baking paper. Arrange sweet potato slices onto prepared baking trays.

Bake for 15-20 minutes (200°C), while still retaining some firmness. Meanwhile, proceed with recipe.
FILLING

Put in mixing bowl 120gr brown onions cut in 4, 30gr celery cut in small pieces and 100gr carrots cut in pieces and chop

Add in mixing bowl 30gr olive oil and 1 teaspoon oregano and saute

Place a bowl onto mixing bowl lid and weigh 170gr quinoa into it. Transfer into a fine-mesh sieve and rinse well. Leave aside

Add in the mixing bowl 200gr water, 2 tablespoons tomato paste, 1 tin chopped tomatoes, 1 vegetable stock ,1 tablespoon vinegar, 1/2 teaspoon salt, 1/2 teaspoon pepper and rinsed quinoa and cook

Put in the mixing bowl 1 tin drained chickpeas and continue cooking

Put the filling mixture in a big sieve and underneath place a big bowl so that the mixture drains excess liquid. Leave aside.
Wash and dry mixing bowl and continue with vegan bechamel.
VEGAN BECHAMEL

Put in the mixing bowl 60gr margarine and melt

Add in mixing bowl 200gr whole wheat flour and cook

Add in mixing bowl 1 liter soya milk, 1 teaspoon nutmeg, 1 tablespoon salt, 1 tablespoon brown sugar, 1/2 teaspoon pepper, 15gr nutritional yeast and cook

ASSEMPLY

Preheat oven to 200 degrees.
Βήμα 2
Grease a baking dish (25 x 30 cm) with oil.
Spread a thin layer of quinoa mixture into base of baking dish, then arrange a single layer of sweet potato over quinoa. Spoon the remaining quinoa mixture over sweet potato and spread evenly. Spoon the béchamel sauce over quinoa and spread evenly with aid of spatula. In case you have more potatoes left you can place another layer of sweet potato, then quinoa and at last béchamel. Sprinkle with grated vegan parmesan.
