Marinade

Place 1 teaspoon salt, 1 teaspoon paprika, 1 teaspoon pepper, 1 teaspoon sumac, 30 g orange juice, 30 g olive oil, 10 g honey into bowl and mix 30 sec/speed 8.

Wash the chicken thoroughly, remove tips of the wings from the joint and clean back of the tail. Rub the whole chicken with the marinade and keep remaining marinade aside.
Stuffing

Place 50 g onion halved, 1 garlic clove, 30 g olive oil into bowl and chop 5 sec/speed 5.

Add 70 g chestnuts, chicken liver, 50 g pine nuts and saute 7 min/Varoma/reverse/speed 1.

Add 200 g parboiled rice, 30 g raisins, 1 teaspoon salt, 1/2 teaspoon pepper, 2 pinches nutmeg, 1/2 teaspoon cinnamon, 50 g tomato juice, 1 tablespoon homemade vegetable stock paste, 400 g water and cook with RICE COOKER mode. Fill the chicken cavity and reserve remaining stuffing.

Place chicken into Varoma dish. Clean and dry mixing bowl.
Sauce

Place 50 g onion halved, 50 g carrots, 500 g water, 1 tablespoon homemade vegetable stock paste, 1 teaspoon salt, remaining marinade into bowl. Place Varoma into position and cook 1 hour 10 min/Varoma/speed 1.

Preheat oven at 220 C. Transfer chicken to heat-proof dish and brown 10-15 minutes. Meanwhile blend sauce 6 sec/speed 10.

Add 1 tablespoon cornflour dissolved in 50 g water and cook 2 min/100 C/speed 3.

Serve chicken, stuffing and sauce separately.
