Steamed salmon with quinoa and cauliflower puree

Coriander oil

Place 1000 g water in mixing bowl and boil 8 min/100°C/speed 0.5.

Add 60 g coriander, leaves and blanch 20 sec/100°C/reverse mode/speed 1. Meanwhile, fill a bowl with cold water and 12 ice cubes. When blanching time ends, drain coriander using simmering basket and transfer into bowl with ice cubes. Once drained, transfer coriander in simmering basket again and let it strain. Once strained, dry with paper towel.

Place dry coriander, 100 g olive oil, and 100 g sunflower oil into mixing bowl and heat 2 min/37°C/speed 6.

Strain the coriander oil through a fine mesh strainer into a small jar. Store in the refrigerator. Thoroughly clean and dry mixing bowl.
Salmon with quinoa and bok choy

Set Varoma dish into position and weigh inside 2 fresh salmon fillets, (250 g in total) and set aside. Place thin strips of peels (no white pith) from 1 orange, 1 lemon and 1 lime, 5 sprigs fresh thyme, leaves only, 1/2 teaspoon Five spice powder, 1 pinch salt and 1 pinch ground black pepper into mixing bowl and grind 15 sec/speed 10. Set Varoma lid under Varoma dish, pour marinade over salmon fillets and set aside.

Insert simmering basket , then weigh 25 g white quinoa and 25 g black quinoa into it. Add 1200 g into mixing bowl over the quinoa mix. Set Varoma dish into position and steam 15 min/Varoma/speed 2.5.

Set Varoma tray into position and place 6 bok choy leaves inside. Set Varoma into position and steam 8 min/Varoma/2.5.

Remove Varoma. Transfer bok choy into a bowl and cover to keep warm. Transfer salmon to another bowl and use a fork to break into pieces. Remove simmering basket with aid of the spatula, transfer quinoa in a separate bowl and cover with cling film.
Cauliflower puree

Place 300 g cauliflower into mixing bowl and chop 5 sec/speed 5. Transfer into a bowl and set aside.

Place 50 g butter, unsalted, cut in pieces and 2 tablespoons of olive oil into mixing bowl and melt 4 min/120°C/speed 1.

Add cauliflower and sauté 10 min/120°C/reverse mode/speed 1.

Add 50 g water, 100 g fresh cream, 1 teaspoon natural vanilla extract, 1 pinch salt and 1 pinch ground black pepper into mixing bowl and cook, without measuring cup, 5 min/Varoma/speed 1.

Assembly

Add 5 fresh chives, finely sliced, into bowl with quinoa, add 1 tablespoon olive oil, lime juice (from 1 lime), 1 pinch salt and 2 pinches ground black pepper and mix using spatula.

Divide quinoa between 2 serving plates and top with salmon. Garnish each serving plate with bok choy, cauliflower puree, coriander oil, 1 pinch ground black pepper, 1 pinch crushed red pepper flakes and 8-10 coriander leaves.
