SCALLOPED POTATOES WITH CASHEW CREME SAUCE

ΕΚΤΕΛΕΣΗ
CASHEW CREME
Βήμα 1
Put in a small bowl 150gr raw unsalted cashews and soak them in boiling water for 20 minutes. Leave aside.
POTATOES

Peal and cut 1.400kg potatoes in very thin slices and put them in a big bowl with water and some lemon juice. Leave aside until you need them.
CARAMELIZED ONIONS

Put in mixing bowl 100gr red onions cut in thin half rounds, 20gr olive oil, 1 teaspoon brown sugar and saute

Put the onions in a small bowl and leave aside.
CASHEW CREME

Put in mixing bowl 400ml water, 1 vegetable stock which you have crumbled with your hands,. Add 400ml coconut milk, cashews after you have drained them, 15gr corn flour, 1/2 teaspoon paprica, 30gr nutritional yeast, 1 1/4 teaspoon salt, pepper, 1 teaspoon onion powder and 1 or 2 garlic cloves. Mix

Scrape down sides with the aid of spatula and mix again

ASSEMPLY

Pre heat oven to 180 degrees.

Get a baking dish 23X33cm and lay inside half of the potatoes after you have drained them. Pour half of the sauce on top. Spread the sliced onion on top and layer the remaining potatoes over the onion. Pour the remaining sauce in the baking dish.

Bake in the oven for 60-70 minutes. The baking time depends on the thickness of the sliced potatoes. The potatoes should be fork-tender and golden brown. When they are ready leave it to cool for 5-10 minutes and then garnish on top with parsley leaves.
