VEGAN BARS WITH A DIFFERENT COOKIE BASE AND CARAMEL FROM DATES AND ALMOND BUTTER

BASE
Βήμα 1
Put in the mixing bowl 70gr melted coconut oil, 40gr maple syrup, 120gr almond flour and 40gr coconut flour. Mix

Scrape down the sides using the aid of spatula and mix again

Pre heat oven to 175 degrees and put parchment paper in a loaf pan.

Press the dough from the mixing bowl into the bottom of the loaf pan.

Bake in the oven for 13 minutes on 175 degrees.
FILLING

Put in the mixing bowl 125gr almond butter, 180gr pitted dates, 1 teaspoon vanilla extract, 1/4 teaspoon salt and 50gr water. Mix

Put in the mixing bowl 105gr toasted desiccated coconut and mix

Scrape down the sides using the aid of spatula and mix again

Spread on top of the cookie base and then put the loaf pan in the freezer for half an hour.
GARNISH

Put in the mixing bowl 250gr dark chocolate couverture in pieces and crush

Add in the mixing bowl 15gr coconut oil and melt

Put melted chocolate in a large bowl so that you can dipp bars inside easily.

Slice the bars into 8-12 squares (depending on how big you want them). Dip the bottom of each in the melted chocolate. Drizzle the tops with remaining chocolate. Chill until set.

Keep leftovers in the fridge
ΣΥΜΒΟΥΛΕΣ

Before you start making the recipe toast desiccated coconut. I toasted mine in the oven at 220 degrees for about 5 minutes, stir/toss, then 5 more minutes until golden brown. Watch it carefully, it can burn quick.

ΠΑΡΑΛΛΑΓΕΣ

You can use any nut butter you prefer but i suggest almond butter. This nut butter along with maple syrup gives the taste of caramel.
