ΕΚΤΕΛΕΣΗ
ROASTED EGGPLANTS
Βήμα 1
Pre heat oven to 200 degrees and put parchment paper on a baking tray 30X40

Cut the eggplants in half, lengthwise. Remove their stem and score them all over, in a crisscross manner using a sharp knife. Make sure you don’t rip or tear their skin.

Add 25gr olive oil, salt, pepper and 1 tablespoon thyme. Rub all over with your hands to coat

Transfer to the baking tray cut side down and bake in the oven for 35-40 minutes approximately, until they are soften. Towards the end start making the filling.

Remove from oven and flip the eggplants over, cut side up. Use a spoon to push on the flesh to create an indentation.
FILLING

Put in mixing bowl 100gr brown onions, 1 garlic clove, 25gr olive oil and chop

Scrape down sides of mixing bowl with the aid of spatula and saute

Add in mixing bowl, 1 tablespoon tomato paste, 1 tablespoon brown sugar, salt, pepper and saute

ASSEMPLY
Βήμα 1
Cut 200gr tomatoes in small pieces and put them in a big bowl. Add in 50gr raisins, the mixture which is ready in mixing bowl, salt and paper and stir with a spoon.

Divide the mixture over the eggplants. Sprinkle with grated vegan parmesan cheese. Add in baking tray 50gr water and bake in the oven for another 15 minutes to 200 degrees.

Serve warm.
