Tahini Dressing

Place 50 g strained yogurt, 80 g tahini, 40g olive oil, 50 g lemon juice, 20 g water, 1 garlic clove, 2 teaspoons honey, 1/2 teaspoon dried mint, 1 pinch ground paprika, 1/2 teaspoon salt, and 1 pinch pepper into the mixing bowl and blend for 1 minute/speed 10. Transfer to a bowl and refrigerate until needed. Rinse and dry the bowl thoroughly.

Place 100 g red cabbage (chopped), 50 g onion, and the leaves from 4-5 sprigs of parsley into the mixing bowl and chop for 3 seconds/speed 5. Transfer to a bowl and set aside.

Quinoa, Chickpeas, and Sweet Potato

Put 200 g quinoa, 400 g water, and 1/2 teaspoon of homemade vegetable stock paste into the mixing bowl. Place the simmering basket into position and add the drained chickpeas and 40 g raisins. Place the Varoma dish into position, weigh in 200g sweet potato (cut into 1 cm cubes), and steam for 15 minutes/Varoma/speed 1. Remove the Varoma dish and the simmering basket with the spatula and set aside to cool for at least 5 minutes before assembling.

Transfer the quinoa from the bowl to a large serving platter. Add the chickpeas and raisins from the simmering basket and the sweet potatoes from the Varoma dish, the chopped salad set aside earlier, 1 sliced avocado, place the platter on the lid of the bowl, weigh in 200g cherry tomatoes (halved), 50g purslane leaves, and the tahini dressing from the refrigerator. Mix gently and serve immediately.
