Quince jam

Place 350 g water, 4-5 apple geranium leaves and 1 cinnamon stick into mixing bowl and heat 5 min/100° C/speed 1. Transfer into a bowl, remove apple geranium leaves and cinnamon stick and set aside.

Place 800 g cut into pieces 3 cm, with skin into mixing bowl and blend, with aid of spatula, 20 sec/speed 6.

Add 500 g sugar, 15 g lemon juice, and the reserved flavoured water, stir with spatula, insert simmering basket into mixing bowl position and set 35 min/Varoma/reverse mode/speed 2.

Test setting point of jam (see tip) then, while jam is still warm, pour into warm glass jars with screw-top lids. Make sure that rims of jars are clean and close immediately then turn jars upside down for 10 minutes before turning right side up and leaving to cool. Serve or store in a cool and dry place.

If you want your jam to have a bright red color, prepare your quinces and leave them for at least 30 minutes and then the process follows.
