Pumpkin Pies (kolokotes)

ΕΚΤΕΛΕΣΗ
Dough
Βήμα 1
Place 100 g semolina, 200 g farina, 550 g village flour, 230 g water, 180 g olive oil, 180 g orange juice, 1 1/2 tsp nutritional yeast and 2 tbsp sugar into mixing bowl and mix 10 sec/speed 6.

Add salt, to taste and set Dough/2 min. Transfer into a bowl and set aside.

Filling

Place 1300 g pumpkin, cut into pieces and grind 5 sec/speed 4.5. Transfer into a bowl and set aside. Add 150 g sultanas, salt, to taste, pepper, to taste, 1 tsp cinnamon, 3 tsp sugar and 150 g bulgur and stir lightly with spatula.

Place 100-150 g fennel (according to taste), 200 g onion, halved and 100 g olive oil into mixing bowl and chop 5 sec/speed 10.

Then sauté 5 min/ 120°C/speed 2. Transfer into the bowl with the reserved filling.

Preheat over at 180°C.

Divide dough into 2 small balls (60 g each). Open dough in a round sheet and add 2-3 tablespoons of filling. Close the sheet in a semicircle and fasten the edges. Transfer to a baking sheet lined with parchment paper.

Bake for 30 min (180°C) or until golden browned. Serve warm or allow them to cool before serving.
