Steaming of pumpkin
Βήμα 1
Place 500 g water and 1 tablespoon vinegar into mixing bowl. Place Varoma into position, weigh in 500 g pumpkin cut into pieces and steam 25 min/Varoma/speed 1. Place Varoma on a small plate and set aside to cool down and drain pumpkin. Rinse the mixing bowl.

Dough

Place 200 g flour, 5 g sugar, 1/2 tsp salt, 100 g butter cut into pieces and 1 medium egg (55 g) into mixing bowl and set Dough/1 min. Shape the dough into a rounded square, cover with cling film and refrigerate for 30 min.

Filling

Place 70 g sugar, 1 tsp ground cinnamon, 1/2 teaspoon salt, 1/2 teaspoon ginger powder, 1 pinch ground clove, the reserved steamed pumpkin pieces, 340 g evaporated milk and 2 eggs into mixing bowl and mix 1 min/speed 5. Transfer the mixture to a bowl or leave in the mixing bowl until needed.

Assembly and baking

Preheat oven to 160 C. Butter a tart tin (diameter 26 cm) and set aside.

With the help of a rolling pin, roll out the dough you refrigerated to a round disk (diameter 28-29 cm) between two baking sheets and cover the base of the tart tin you have prepared making sure to cover the walls of the tin as well. Prick the base of the dough with a fork and bake 10 min (160 C).

Transfer the reserved filling over the baked dough base and smooth evenly with the back of a spoon. Bake for another 45 min (160 C).

Place tart on a cooking rack and let it cool down for at least 45 min before serving. Serve with whipped cream or ice cream.
