PUMPKIN PIE
Βήμα 1
Remove phyllo pastry from the freezer and let it defrost. It needs a couple of hours approximately

Put 100gr walnuts in mixing bowl and mix. Put them in a bowl and leave aside

Cut 850gr pumpkin in big pieces and put them in mixing bowl. Mix

Remove the pumpkin from mixing bowl and put it in a clean towel. Squeeze with your hands as much as you can to remove excess water.

Put the pumpkin back in the mixing bowl and cook without the measuring cup.

Put in the mixing bowl 150gr brown soft sugar, 100gr raisins, walnuts, 1 tablespoon cinnamon, 1/2 teaspoon vanilla extract and continue cooking without the measuring cup

Put the mixture in a bowl and leave it on the side for half an hour approximately.

Pre heat the oven to 170-180 degrees and put parchment paper on a baking tray.

Open filo pastries one by one. Sprinkle olive oil on the first filo and then put a layer of the filling from one side of the filo to the other. Roll the filo and put it on the baking tray. Do the same thing with all the filo pastry sheets until you finish.

Bake in the oven for 25 minutes approximately.
OPTIONAL FROSTING

Put in the mixing bowl 150gr sugar with 150gr water. Heat

Let the pumpkin pie cool down and then sprinkle the hot frosting on top. Serve!
ΠΑΡΑΛΛΑΓΕΣ
If you dont want to use the frosting in the recipe you can just sprinkle on top powdered sugar. It will be more crunchy this way!
