VEGAN AND VERY TASTY BARS THAT IF YOU WONT CUT THEM THEY CAN EASILY BE EATEN AS A CAKE. CRUNCHY BASE WITH A SWEET FILLING FROM PUMPKIN!

BASE

Put in the mixing bowl 100gr oat flour, 170gr almond flour, 1/4 teaspoon salt, 25gr coconut sugar, 75gr melted coconut oil. Mix

Scrape down the sides using the aid of spatula and mix again

Pre heat oven to 175 degrees and put parchment paper in a loaf tin.

Lay the mixture in the loaf tin and spread evenly to create a nice surface.

Bake in the oven to 175 degrees for 20 minutes exactly. In the meantime continue with the filling.
FILLING

Put in the mixing bowl 450gr pumpkin puree, 90gr maple syrup, 40gr coconut milk, 15gr corn flour, 1 3/4 pumpkin spice and 1/4 teaspoon salt. Mix

Scrape down the sides using the aid of spatula and mix again

When the base is ready remove from the oven and lay on top the filling mixture.

Return the loaf tin in the oven and continue baking for another 50 minutes.

Let the loaf tin cool completely and then put it in the fridge for 4-5 hours. Then cut in bars and store in an airtight tupper.
