Potato puree and mushroom sauce

Potatoes purée
Βήμα 1
Insert butterfly whisk. Place 1 kg potatoes, peeled, cut into pieces 3 cm, 350 g fresh milk, 1 tsp salt into mixing bowl and cook 35 min/ 95° C/reverse mode/speed 1.

Add 70 g butter, cut into pieces, 1/4 tsp ground pepper, 1 pinch nutmeg, to taste into mixing bowl and whisk 30 sec/speed 3. Transfer into a thermal bowl and keep warm. Wash and dry mixing bowl.

Mushroom sauce
Βήμα 1
Place 1/2 tsp ground peppercorns and 3 g dried porcine mushrooms into mixing bowl and chop 10 sec/speed 7.

Add 1 garlic clove and 90 g onion, cut into pieces and chop 5 sec/speed 5.5.

Add 30 g butter, unsalted and 10 g olive oil and sauté 5 min/120°C/speed 1.

Add 40 g cognac and 40 g commandaria and cook 2 min/Varoma/speed 1.

Add 250 g mushrooms portobello, cut in slices and 1 tsp thyme leaves and cook 4 min/Varoma/reverse mode/speed spoon.

Βήμα 6
Add 15 g worcestershire sauce, 20 g mustard seeds, 200 g fresh cream
and 6 g corn flour and cook 10 min/Varoma/reverse mode/speed spoon. Αdd 10 g commantaria, stir, transfer into a bowl and set aside. Serve potato puree and mushroom sauce with a steak, cooked to taste.
