Pork fillet with apples, potatoes and broccoli

Preparation
Βήμα 1
Place a bowl on mixing bowl lid, weigh in 700 g pork fillet sliced to 1 cm thick pieces and slightly beaten, 40 g olive oil and mix gently to cover all the fillets with oil. Add some salt and pepper and refrigerate for 1/2 an hour.

Place a bowl on mixing bowl lid, weigh in 300 peeled apple slices, sprinke with 20 g lemon juice and mix gently to avoid discolouring. Sprinkle over 1 pinch ground cinnamon and 1 pinch ground clove and set aside.
Sauce

Place 50 g red wine, 10 g Worcestershire sauce, 1 tablespoon vegetable stock paste, 15 g tomato paste, 500 g water, 200 g apples in small pieces, 1 pinch ground cinnamon, 1 pinch ground clove, 1/2 teaspoon salt and 1 pinch pepper into mixing bowl and set aside.
Steaming

Insert simmering basket and weigh in 600 g small new potatoes, thoroughly washed.

Place the marinated pork fillet pieces and the apple slices in the deep Varoma dish, alternating them and allowing space for the steam to come through for even cooking. Place Varoma in position, insert the shallow Varoma tray and weigh in 300 g broccoli florets. Close with the Varoma lid and steam 30 min/Varoma/speed 1.

Remove Varoma and set aside with closed lid to keep warm. Insert measuring cup and steam the potatoes in the simmering basket for another 10 min/Varoma/speed 1.

Remove simmering basket with potatoes and set aside. Blend the mixture in mixing bowl 6 min/speed 6.

Add 10 g corn flour diluted in 50 g cold water and thicken the sauce , without measuring cup, 4 min/100 C/speed 2.5.

Remove simmering basket with aid of spatula and shake the potatoes inside to fluff the edges. Transfer to a bowl, add salt and pepper, 1 teaspoon ground coriander, 2 tablespoons olive oil and mix gently. Transfer to a serving bowl and serve with the pork fillets and apples. Garnish with some sauce and serve the remaining sauce aside.
