ΕΚΤΕΛΕΣΗ
Pork belly
Βήμα 1
Season the four pieces of pork belly with 30 g of olive oil, 1 pinch coriander, 1 pinch cinnamon, 1 pinch salt and 1 pinch pepper. Transfer to sous-vide bags and seal by completely removing air with the help of the vacuum food sealer.

Place blade cover and sous-vide bags with pork belly in mixing bowl. Add 1000 g water and 1 tbsp vinegar (caution: liquids should not exceed the MAX mark).

Remove sous-vide bags and set 15 min/74 °C/sous –vide.

Carefully place sous-vide bags in mixing bowl and set to 8 hours / 74 ° C / sous –vide.

Remove sous-vide bags from mixing bowl. Open the bags, transfer pork belly pieces on kitchen paper to drain well. Empty mixing bowl.
Vegetables

Place 500 g water, 1 tbsp vinegar into mixing bowl. Place varoma into position. Transfer in Varoma dish 500 g potatoes and place in Varoma tray 150 g carrots, 200 g broccoli. Set 25 minutes / varoma / speed 1.

Transfer vegetables and potatoes to serving dish. Garnish with 1 pinch salt, 1 pinch pepper, drizzle with 40 g olive oil and sprinkle potatoes with 1 pinch paprika. Remove water from mixing bowl.
BBQ sauce with apples

Place 30 g honey, 5 g mustard, 100 g tomato, 100 g apple, 20 g pomegranate syrup, 1 tablespoon olive oil, 1 tablespoon vinegar, 1 pinch coriander, 1 pinch cinnamon, 2 cloves, 1 pinch ginger and set for 5 minutes / varoma / speed 1.5.

Grind 6 seconds/speed 6. Transfer in a bowl and set aside.

In a non-stick pan (after the stove is heated) shield the meat over medium heat until it turns red on all sides, starting from the top. Serve with side dishes and sauce.

ΠΑΡΑΛΛΑΓΕΣ

You can prepare the meat (steps 1-5), remove reusable vacuum bags (with the bacon pieces from mixing bowl) and transfer them to ice water. You can then refrigerate the meat (as they are, sealed into vacuum bags) up to 1 week. When needed, re-heat for 10 minutes / 70 ° C / sous-vide. Continue the recipe as it is after step 5.
You can also shield the meat on a BBQ grill, or in oven.
