You can prepare the meat (steps 1-5), remove reusable vacuum bags (with the bacon pieces from mixing bowl) and transfer them to ice water. You can then refrigerate the meat (as they are, sealed into vacuum bags) up to 1 week. When needed, re-heat for 10 minutes / 70 ° C / sous-vide. Continue the recipe as it is after step 5.
You can also shield the meat on a BBQ grill, or in oven.
