Pistachio cookies with chocolate filling

Chocolate ganache
Βήμα 1
Place 120 g chocolate in mixing bowl and grate 15 sec/speed 10. Scrape down sides with aid of spatula.

Add 110 g double cream and melt 4 min/50C/speed 1.

Add butter and mix 15 sec/speed 4. Transfer in a bowl and set aside. Wash and dry mixing bowl.

Pistachio cookies
Βήμα 1
Place 175 g sugar into mixing bowl and grind 8 sec/speed 10. Scrape down sides with aid of spatula.

Add 180 g pistachios, 60 g flour, 1/2 teaspoon baking powder and grind 10 sec/speed 10. Scrape down sides with aid of spatula.

Add 2 egg whites, 1/2 teaspoon green edible colour and mix 28 sec/dough function. Transfer mixture into piping bag.

Preheat oven 160C. Cover baking tray with baking paper and shape 16 circles (diameter 2-2.5cm - height 1.5 cm ) with the aid of piping bag. Repeat procces with remaining mixture in a second baking tray.

Bake in pre-heated oven (160C) for 8 - 10 minutes. Ideally they should be crisp outside and a most and soft inside. Allow to cool down and transfer on a rack.

Once cool, sandwich 2 cookies together with chocolate ganache using 1 heaped teaspoon. Repeat process with all pistachio cookies. Serve immediately.
