Preparation

Insert butterfly whisk. Place 250 g fresh cream into mixing bowl and whip without setting time/speed 4, until desired consistency is achieved, watching carefully through hole in mixing bowl lid to avoid overwhipping. Transfer to a bowl and refrigerate until needed. Wash and dry mixing bowl well.

Base

Cover the base of a round spring cake form with greaseproof paper and set aside.

Place 180 g digestive biscuits, 25 g soft brown sugar, 10 g cocoa and 60 hazelnut spread into mixing bowl and grind 5 sec/speed 10.

Add 70 g unsalted butter cut into pieces at room temperature and mix 5 sec/speed 5. Transfer to the prepared form and spread evenly over the base with the back of a spoon. Refrigerate until needed. Wash and dry mixing bowl well.

Place a small bowl onto mixing bowl lid and weigh inside 30 g water and 10 gelatin powder. Set aside.

Place 600 g strawberries and 50 g sugar into mixing bowl and Blend/30 sec/speed 8.

Then heat 3 min/90 C/speed 1. Meanwhile, at 2 minutes, add the water and gelatin you set aside through the measuring cup opening while the knives are still in motion.

Add 180 g white chocolate cut into pieces and melt 2 min/speed 2. Transfer to a big bowl and set aside.

Place 500 g cream cheese, remaining 115 g sugar and 1 sachet vanilla sugar into mixing bowl and mix 30 sec/speed 5.

Add the strawberry/white chocolate mixture and mix 30 sec/speed 4. Transfer back to the big bowl, add the whipped cream you have refrigerated and fold carefully with the spatula. Spread mixture evenly over the base in the cake form and refrigerate for at least 4 hours.

Βήμα 10
Use a small knife or small pastry spatula to separate the cheesecake from the cake form ring, remove the ring and transfer cheesecake to a serrving platter. Decorate with white chocolate shavings and straberries cut into halves. Serve cold.
