Persian Salad with wild rice and pumpkin

Place 1000 g water and 1 tbsp homemade vegetable stock into mixing bowl. Insert simmering basket into position, weigh 300 g wild rice into it and cook 30 min/100°C/ speed 4. Using simmering basket, transfer rice under cold running water. Transfer the rice to a bowl and set aside to cool. Empty water from mixing bowl.

Place 70 g red onion, halved, 6 sprigs anise, leaves only a and 6 sprigs parsley, leaves only into mixing bowl and chop 5 sec/speed 5. Transfer into a separate bowl and set aside. Clean and dry mixing bowl.

Place 400 g pumpkin, peeled, cubes 2-3 cm, 30 g olive oil, 1 tsp cumin, 1 tsp olive oil and 1 tsp pepper into mixing bowl and saute 20 min/120°C/reverse mode/speed spoon. Transfer into the bowl with rice, add reserved chopped onion, parsley and anise, 60 g dried cranberries 200 g pomegranate,100 g roasted hazelnuts, peeled, 200 g feta cheese, cubed , stir lightly with spatula and set aside.

Place 1/2orange peel into mixing bowl and grin 10 sec/speed 10.

Add 40 g orange juice,40 g lime juice,3 tbsp honey, 4 tbsp balsamic vinegar, 40 g olive oil and mix 10 sec/speed 5. Transfer into the bowl with rice, stir lightly with spatula and refrigerate for 30 min. Garnish with parsley and anise leaves and serve immediately.
