Peach trifle with berry jam

Spread half savoyards biscuits in a deep trifle bowl and sprinkle with 10 g brandy. Meanwhile continue with berry jam.
Berry jam

Place 300 g mixed berries, 300 g sugar, 20 g lemon juice in mixing bowl and set 10 minutes / 105 ℃ / speed 2. Spread half jam over the savoyards that you have sprinkled with brandy. Cover with 100 g peaches. Transfer remaining jam to a bowl. Clean and dry mixing bowl thoroughly.

Patisserie cream

Place 1000 g milk, 3 eggs, 110 g corn flour, 170 g sugar, 1 teaspoon homemade vanilla sugar in mixing bowl and set 15 minutes / 98 ℃ / speed 3.5. Spread half patisserie cream over peaches in trifle bowl. Cover patisserie cream with remaining savoyards and sprinkle with remaining 10 g brandy. Add remaining jam on top and garnish with remaining 100 g peaches. Cover with remaining patisserie cream. Refrigerate for 2 hours.

Whipped cream

Clean and dry mixing bowl thoroughly. Place 40 g sugar, 1 teaspoon homemade vanilla sugar and set 9 seconds / speed 10.

Insert butterfly whisk. Place cream into mixing bowl and whip without setting time/speed 3, until desired consistency is achieved, watching carefully through hole in mixing bowl lid to avoid overwhipping. Transfer 100 g in pipping bag. Use remaining 400 g to cover trifle.

Garnishing

Garnishing with remaining 100 g whipped cream in pipping bag, 30 g pistachios and red fruits.
