Orange semolina cake

Place a heatproof bowl on top of mixing bowl lid, weigh inside 400 g thin orange slices (2-3 mm) and set aside. Place 150 g orange juice and 150 g sugar into mixing bowl and heat 5 min/100 C/speed 3. Meanwhile, preheat oven to 160 C fan, butter a cake tin (26 cm), cover the base of the tin with baking paper and set aside.

Pour the hot syrup over the orange slices and set aside. Wash and dry mixing bowl well.
Place a bowl on top of mixing bowl lid and weigh inside 160 g fine semolina flour, 130 flour (00), 2 teaspoons baking powder and 1/2 teaspoon salt, mix with spatula and set aside.
Place 250 g butter cut into pieces, 250 g sugar and 20 g orange peel into mixing bowl and beat 30 sec/speed 5.

Add 3 large eggs, 100 g orange juice and mix 15 sec/speed 5.

Add the flour/baking powder mixture you set aside and set Dough/1 min.

Scrape down mixing bowl with spatula and mix 30 sec/speed 3.
- 30 δευτ.
Cover the base of the cake tin you have prepared with the orange slices that have been soaking in syrup and set aside syrup for later use.
Transfer the cake mixture from the mixing bowl to the cake tin over the orange slices and spread evenly. Bake for 60 min (160 C fan). Meanwhile, place a bowl on mixing bowl lid, weigh inside 125 g syrup and set aside. Then place a second bowl on mixing bowl lid, weigh inside 60 g syrup and set aside.
Remove the cake from the oven and, while hot and still in the cake tin, spread the 125 g syrup you set aside on top and leave to stand for 20 minutes.
Invert the cake onto a serving platter and spread the remaining 60 g syrup you have set aside over the orange slices. Serve in room temperature.
