Octopus with honey and commandaria served with pasta shells

Get 1000 g octopus cleaned, in 2-3 cm pieces, from Blue Island Fish Market. Place the Varoma tray onto mixing bowl lid weigh in octopus and set aside to drain.

Place 500 g tomatoes, quartered, into mixing bowl and chop 5 sec/speed 5. Transfer into a bowl and set aside. Rinse mixing bowl.

Place 1000 g water into mixing bowl, set Varoma with octopus into position and steam 30 min/Varoma/speed 1. Remove Varoma, place mixing bowl into a thermal bowl and set aside to keep warm. Empty mixing bowl.

Place 1500 g water, 300 g pasta shells and 1 tsp salt into mixing bowl and cook 8 min/100°C/reverse mode/speed 1. Place simmering basket into position and strain pasta. Transfer into a bowl and set aside.

Place 150 g onion, quartered and 100 g olive oil and chop 5 sec/speed 5.

Then saute, with simmering basket onto measuring cup position, 5 min//120°C/speed 1.

Add reserved, half-cooked octopus, 250 g commandaria, 250 g dry red wine and 25 g honey and cook, with simmering basket onto measuring cup position, 10 min/120 °C/ reverse mode/speed spoon.

Add reserved chopped tomatoes, 50 g balsamic vinegar, 2-3 cinnamon sticks, 2-3 baby leaves, the remaining 1 tsp salt, 1/2 tsp pepper and steam 15 min/Varoma/reverse mode/ speed spoon.

Add strained pasta shells and cook 5 min/100°C/reverse mode/speed spoon. Transfer into a serving plate and serve immediately.
