Octopus and caramelised onions
Βήμα 1
Place 1200 g octopus, cut into pieces 4-5 cm, 40 g olive oil, 2 bay leaves, 1 cinnamon stick, 95 g ouzo, 1 fennel, sliced and 1 onion, sliced. Transfer mixing bowl from Thermomix to Thermomix friend and set 45-50 min/100°C/reverse mode/speed 1. Transfer octopus into a thermal bowl and set aside to cool. Empty mixing bowl.

Place 450 g onions, quartered , 40 g olive oil, and 1/2 tsp salt into mixing bowl and chop 5 sec/speed 5.

Then saute 10 min/100°C/reverse mode/speed spoon.
Βήμα 4
Add 2/3 tsp salt, 2-3 thyme sprigs, leaves only, 1 tsp honey, 25 g balsamic vinegar and cook 10 min /100°C/reverse mode/speed spoon or until the onions are caramelised. Transfer into a bowl and set aside. Clean and dry mixing bowl thoroughly.

Βήμα 1
Place 150 g onion, quartered, 2 garlic cloves and 80 g olive oil into mixing bowl and chop 3 sec/speed 5.

Add 1 tsp salt, 1 tsp pepper and saute 5 min//120°C/speed 1.

Add 225 g yellow lentils, 500 g water and cook 40 min/100°C/ταχύτητα 1.

When cooking time ends, add lemon juice (from 1 lemon) or to taste and orange juice (from 1 orange) or to taste into mixing bowl and blend 15 sec/speed 4-8, increasing speed gradually.

Serve cooked octopus with fava and caramelised onions.

If you don't have a Thermomix Friend, you can prepare the octopus in the Thermomix and when you're done, you can continue with the caramelized onions.
