Nougat with chestnuts and red currants

Preheat oven at 175˚C. Line a baking tray with baking paper and draw 3 circles (18 cm diameter).

Place 140 g peeled chestnuts and 100 g almonds into mixing bowl and grind 5 sec/speed 10. Transfer into a bowl and set aside. Clean and dry mixing bowl thoroughly.

Nougat biscuits

Place 200 g sugar into mixing bowl and grind 5 sec./speed 10.

Insert butterfly whisk. Add 5 egg white and whip 2 min/70˚C/ταχύτητα 3.

With butterfly whisk still in place, mix 2 min/speed 3.5 or until meringue in firm.

Add 50 g flour and 160 g from the reserved ground chestnuts and mix 3 sec/speed 3.

With a pipping bag, draw circular spirals onto the baking paper with the circle drawing. Draw 3 circles in total and bake 25-30 min (175˚C). Remove from oven and let the round biscuits cool on a wire rack.
Crème pâtissière

In the meantime, place 70 g red currants into mixing bowl and grind 5 sec/speed 5.

Add 500 g, 80 g sugar, 3 egg yolks and1 tsp homemade vanilla sugar into mixing bowl and heat 6 min/100˚C/speed 2.5.

Transfer to a container, cover with cling film, and refrigerate for at least 1 hour. Clean and dry mixing bowl thoroughly.
Assembly

Insert butterfly whisk. Place reserved crème pâtissière with red currants, and 20 g orange liquor into mixing bowl and mix 3 sec/speed 3.

Divide and spread the cream patisserie evenly between the 3 baked nougat biscuits. Stack each nougat biscuit on top of the other to assemble a cake. Cover the sides and surface of the cake with the prepared whipped cream. Sprinkle with the remaining 80 g ground chestnuts and almonds, and garnish with 8-9 red currants. Served chilled.
