Place 500 g portobello mushrooms into mixing bowl and chop 7 seconds/speed 5. Transfer in a bowl and set aside.

Place 200 g sweet potato, 200 g red onion. 1 garlic clove, 20 g olive oil and chop 5 seconds/speed 5. Scrape down sides with the aid of spatula.

Ad chopped portobello mushrooms, 6 springs parsley, 90 g breadcrumbs, 130 g sunflower seeds, 70 g tomato paste, 1 tablespoon homemade vegetable stock, 1 teaspoon salt, 1/2 teaspoon pepper and mix 30 seconds/speed 4 with the aid of spatula. Transfer in a bowl, cover with cling film and refrigerate for 1 hour.

Pre-heat oven at 180C. Cover a baking tray oven with baking paper and set aside. Divide mixture into 6 balls (approx. 200 g each). Shape into burger patties and transfer onto prepared baking tray.
Bake for 30 minutes. Serve with burger buns, avocado sauce and caramelised onions.
You can prepare the mixture the previous day and refrigerate.
