Mini lemon cheesecakes with red berry coulis

ΕΚΤΕΛΕΣΗ
Crust
Βήμα 1
Place 30 individual silicone moulds in a 30-hole muffin tray and set aside.

Place 30 g sugar and thin strips of peel from 1 lemon (no white pith) into mixing bowl and grind 20 sec/speed 10.

Add 30 biscuits, wholemeal, halved and crush 10 sec/speed 10. Scrape down sides of mixing bowl with spatula.

Add 50 g unsalted butter, cut in pieces and melt
4 min/60°C/speed 3. Divide biscuit mixture between 30 silicon moulds (adding approx. 1 full tablespoon in each) and gently flatten with back of a spoon softy. Transfer into freezer. Thoroughly rinse and dry mixing bowl. Meanwhile, continue with filling.

Filling

Place 150 g sugar and thin strips of peel from 1 lemon (no white pith) into mixing bowl and grind 25 sec/speed 10. Scrape down sides of mixing bowl with spatula.

Add 300 fresh cream, 600 g cream cheese, 60 g lemon juice, 10 g gelatine powder and 1 pinch of salt into mixing bowl and heat 4 min/70°C/speed 3. Transfer filling into a bowl. Using a spoon,transfer filling on top of the crust in each silicon mould (up to 3/4 of the mould. Set aside for approximately 15 minutes, then cover with cling film and transfer into the freezer for approximately 3 hours, or until set. Thoroughly rinse and dry mixing bowl. Meanwhile, continue with red berry coulis.

Red berry coulis

Place 150 g red berry mix, 75 g sugar and thin strips of peel from 1 lime (no white pith) and its juice into mixing bowl and heat 12 mins/80°C/speed 3.

Grind 10 sec/speed 10. Transfer into a bowl and set aside.

Garnish
Βήμα 1
When the 3 hours have passed, remove from freezer, unmould frozen mini cheesecakes and cover each with 1 tablespoon of red berry coulis. Garnish with strawberries, raspberries, fresh mint and serve immediately.
ΣΥΜΒΟΥΛΕΣ
You can make the cheesecakes from the previous day and leave them in the freezer. You can make the red berry coulis 1 hour before serving.
