Base
Βήμα 1
Place 200 g digestive biscuits into mixing bowl and grind 5 sec/speed 7.

Add 50 g butter and melt 5 min/80C/speed 2. Transfer to a bowl and set aside. Clean and dry mixing bowl thoroughly.

Lemon curd

Place 240 g sugar and lemon peel from 1 lemon and grind 20 sec/speed 10.

Add 120 g butter, 3 eggs, 150 g lemon juice and heat without measuring cup 20 min/90C/speed 2.

Place measuring cup into position and mix 25 sec/speed 6. Transfer to a bowl and set aside to cool down (approx. 30 min).

Chocolate – Lemon mousse

Place 120 g chocolate into mixing bowl and grind 5 sec/speed 8. Scrape down mixing bowl sides with spatula.

Add 480 g fresh cream and heat 5 min/70C/speed 3.5.

Add 400 g cream cheese, 90 g of the lemon curd you have set aside, 120 g sugar and mix 20 sec/speed 4. The mixture will be runny. Transfer to a bowl and set aside.

Assembly & Garnish

Place 30 g of ground digestive biscuits with butter you have set aside into a small glass to cover the base. Cover on top with 50 g lemon curd and add 110 g chocolate-lemon mousse on top. Repeat process until you have filled all glasses. Refrigerate for approximately 2 hours. Garnish with some ground digestive biscuits, ½ teaspoon of cherry filling and 1 mint leave before serving.
