Traditional Cyprus kantaifi (ka-nta-ee-fi)

Place 180 g almonds and 70 g walnuts into mixing bowl and chop 3 seconds/speed 5.

Add 30 g sugar, 1 tablespoon ground cinnamon and mix 5 seconds/speed 2.5. Transfer to a bowl, place bowl on top of mixing bowl lid and weigh in 25 g water. Mix gently and set aside until needed.
Assembly and baking
Pre-heat oven to 180 C. Brush a round oven dish ( 34 cm. in diameter) and set aside.
Cut out a piece (30 x 6) of shredded kantaifi pastry and pull apart the strands with your fingers to loosen them up. Place 1 tablespoon of filling width-wise onto one side and roll it up but not too tight. Transfer to the prepared oven dish. Repeat the process until all shredded kantaifi pastry has been used.
Place 150 g unsalted butter in pieces, 150 g vegetable butter and 150 g sunflower oil into mixing bowl and melt 5 minutes/70 C/speed 2. Pour 1 tablespoon melted fat on each piece of rolled kataifi until all melted fat has been used.

Bake in pre-heated oven (180 C) for 50 minutes. Meanwhile prepare syrup.
Place 700 g sugar into mixing bowl and grind 10 seconds/speed 10. Scrape down sides of mixing bowl with spatula.

Add 300 g water, 1 cinnamon stick and heat 15 minutes/115 C/speed 2. Remove cinnamon stick, transfer to a heat-proof jug and set aside until kantaifi has finished baking.

Pour still hot syrup over kantaifi as soon as baking time has finished, cover with a plastic bag, hold bag in place with a plate or tray and wrap the whole dish in a kitchen towel or blanket. Leave to cool down for 1 hour.
Turn each piece of kantaifi upside down for few minutes to immerse the top side into the syrup as well. Transfer to a serving plate and serve immediately.
