PREPARATION
CHIA 'EGG'
Step 1
In a small bowl put 10gr chia seeds with 25gr lukewarm water and stir with a spoon. Leave on the side for 15 minutes. It will thicken up to a gel like consistency. This is chia 'egg'.
DOUGH
Step 1
put in mixing bowl 420gr of flour, 45gr coconut sugar 1/2 teaspoon salt, 5gr cinnamon, 5gr nutmeg, 5gr instant yeast, 1 tablespoon orange zest and 50gr raisins. Mix

Step 2
Put in mixing bowl 115gr lukewarm water, 115gr coconut milk, 1 teaspoon vanilla extract, 40gr olive oil, and chia 'egg'. In a small bowl stir 5gr apple cider vinegar with 1 teaspoon of baking soda. It will start to foam. Add this in the mixing bowl too. Combine

Step 3
We want to form a ball. If its too runny add more flour, if its too hard add more milk. Put the dough in a bowl and cover. Let it rise for one hour. It should double in size.
Step 4
Put parchment paper in a circle tray diameter 25 centimeters approximately.

Remove the dough from the bowl and form 8-9 small balls. 85 - 90gr each. Put the balls in the tray. Not too close to each other but not too far either.

Pre heat the over to 180 degrees

Leave the buns aside to rise for another 25-30 minutes.

Bake for 25-30 minutes

As soon you take them out from the over, you can brush them on top with honey, agave syrup or maple syrup. Garnish with dessicated coconut, or powdered sugar.
TIPS

They are amazing if you cut them in half and put jam inside!

VARIATIONS

You can use flaxseed 'egg' too if you dont have chia seeds. Put 7gr of ground flaxseed with 25gr of water and leave aside. It also needs 15 minutes to form a gel. This is flaxseed 'egg'.
