Place 100 g onion, 120 g sunflower and chop 5 seconds/speed 5.

Add 350 g chicken liver, 1 tablespoon vegetable stock, 25 g cognac, 145 g raisins, 90 g pines nuts, 90 g blanched almonds, 100 g chestnuts, 1.5 teaspoon salt, 2 pinches pepper, 2 pinches nutmeg and saute 5 min/120C/reverse/spoon speed. Transfer in a bowl and set aside.

Place 1200 g water into mixing bowl, place simmering basket into position, weigh in 350 g par-boiled and cook 20 minutes/Varoma/speed 4. Remove simmering basket with the aid of spatula, transfer stuffing into a bowl, add liver mixture and mix gently with a fork. Transfer rice stuffing into bundt pan and set aside for 10-15 minutes.
