Duck breast with maple syrup sauce and dried figs
Βήμα 1
Carve skin duck breasts in diamond shape. Place duck breasts in Varoma dish, sprinkle with 2 teaspoons salt, 2 pinches of pepper, 2 teaspoons mixed spice, 1 teaspoon ginger and set aside.

Place 70 g butter, 15 g olive oil, 150 g onion and chop 5 seconds/speed 5.

Saute 5 min/120C/speed 1.

Add 200 g commandaria, 200 g berry juice, 50 g maple syrup, 6 dry figs, 2 teaspoons thyme, 1 teaspoon salt, 1 pinch pepper and place Varoma into position. Cook 25 min/varoma/speed 2. Transfer to the grill for 5 minutes. Alternatively, fry in a non-stick pan without oil for 1-2 minutes, for a more ruby color.

Allow duck breast to rest for 5-10 minutes. Cut the duck breasts diagonally to a thickness of 1 cm. Pour a little sauce on the duck. Serve with the remaining sauce on the side.
