Place 80 g parmesan cheese, cut into pieces into mixing bowl and grind 10 seconds/speed 10. Transfer into a bowl and set aside.

Add 1 tablespoon homemade vegetable stock, 500 g penne pasta and cook for time indicated on package/100°C/reverse mode/speed 1.

Using the Varoma dish, drain the pasta and transfer to a large serving bowl. Keep warm. Meanwhile, continue with the sauce.

Transfer sauce into large serving bowl with penne pasta and mix gently with the aid of spatula. Garnish with reserved 40 g grated parmesan and serve immediately.
