CREAMY ORZO WITH TOFU
Βήμα 1
Put a plate on top of the mixing bowl and weigh in 85gr firm tofu. Put the plate aside and place on top of it a very heavy object sto that you help tofu release any excess water. It needs approximately 15 minutes.

Put in the mixing bowl 140gr brown onions cut in 4, 1 garlic clove and chop

Scrape down sides with the aid of spatula and add in the mixing bowl 30gr olive oil. Saute

Cut tofu in small pieces and then crumble it with your hands and add it in the mixing bowl. Also add 300gr mushrooms cut in thin slices and 100gr carrots cut in small pieces. Saute

Add in the mixing bowl 220gr medium whole wheat orzo and saute

Put in the mixing bowl 1 vegetable stock, 1 teaspoon salt, 1/2 teaspoon turmeric, 410gr water and cook

Add in the mixing bowl 200ml oat cream,5-6 basil leaves and cook further more

Serve immediately with freshly ground pepper!
ΠΑΡΑΛΛΑΓΕΣ
1. You can make it with non whole wheat orzo.
2. You can use any cream you prefer. Soya, oat or coconut.
