Coconut cake with mixed berries
Βήμα 1
Preheat oven at 180C. Grease a cake tin with a hole in the centre (diameter 24 cm) and set aside.

Place 50 g sugar into mixing bowl and grind 20 sec/speed 10. Transfer to a bowl and set aside.

Place 250 g sunflower oil, 3 eggs, remaining 225 g sugar and 1 teaspoon vanilla sugar into mixing bowl and mix 10 sec/speed 4.

Add 300 g flour, 65 g coconut flakes, 175 g soy milk and mix 25 sec/speed 4

Transfer ½ of the mixture into prepared cake tin. Cover with mixed berries and pour remaining ½ cake mixture on top.

Bake into preheated oven (180C) for 50 min. Set aside to cool for 10 minutes and transfer on rack to cool down completely.

Garnish with icing sugar and serve.
