Shortcrust pastry

Grease a round mold (30 cm) and set aside. Place 100 g sugar into mixing bowl and grind 10 sec/speed 10.

Add 200 g butter, cut in pieces, 370 g flour, 1 egg, 1 tsp homemade vanilla sugar and 1 tbsp salt flakes into mixing bowl and mix 30 sec/speed 5. Transfer into a bowl, cover with cling film and place into fridge for 1 hour. Clean and dry mixing bowl.

Preheat oven to 180°C.

Roll out the dough into a sheet (diameter 40-45 cm) between 2 sheets of non-stick paper. Spread on the form, covering the walls as well. Trim any excess dough from the sides, prick the surface of the dough with a fork, fill with weights and bake for 15 minutes (180°C).

Without turning off the oven, remove the weights and parchment paper and return to the oven for about 15 minutes or until lightly browned. In the meantime, continue with the recipe.
Chocolate ganache

Place 300 g dark chocolate cut in pieces and grind 10 sec/speed 8. Scrape down sides of mixing bowl with spatula.

Add 240 g fresh cream into mixing bowl and melt 3 min/50°C/speed 3. Transfer into a bowl and set aside until needed. Clean and dry mixing bowl.

Pears

Place 20 g butter, 400 g pears, cut into pieces, 30 g sugar, insert splash guard and set 10 min/120°C/reverse mode/speed 1. Transfer into simmering basket and strain them well.

In a bowl, add strained pears, 2 tbsp jam, 1 pinch ground ginger, 1 pinch ground cinnamon, 1 pinch ground nutmeg, 1 pinch aniseed and mix lightly with the aid of spatula. Set aside.
Assembly

Transfer tart onto a rack to cool for 15 min. Cover with chocolate ganache and transfer back into fridge.

Before serving, decorate with pears and coarse pistachios.
ΣΥΜΒΟΥΛΕΣ

– You can make the shortcrust dough 3 days in advance, cover with plastic wrap and keep in the fridge.
– You can decorate the tart with small individual marshmallows or caramelized ginger.
