Ganache
Βήμα 1
Place 200 g dark chocolate in pieces into mixing bowl and grind 5 sec/speed 6.

Add 100 g butter in pieces, 100 g milk and 3 g instant coffee powder into mixing bowl and melt 5 min/40 C/speed 2. Transfer to a bowl and refrigerate until needed. Wash and dry mixing bowl well.

Dough

Place 250 g flour, 100 g butter in pieces, 1 large egg and 1 pinch salt into mixing bowl and mix 5 sec/speed 5.

Then set Kneading/1 min and 30 sec. Cover the dough with cling film and refrigerate for 20 minutes. Wash and dry mixing bowl well.

Preheat oven to 180 C. Grease a round tart tin with removable base (24 cm) including the sides and set aside.

With the help of a rolling pin, roll the dough into a circle 27-28 cm diameter and transfer the tart tin you have prepared covering the sides as well. Prick the surface of the dough with a fork, cover with baking paper, fill with pastry weights and bake blind for 10 minutes (180 C).

Remove the pastry weights and baking paper and bake for another 10 minutes (180 C). Set aside to cool for about 20 minutes. Meanwhile, continue with the recipe for whipped cream.
Whipped cream

Place 10 g sugar into mixing bowl and grind 10 sec/speed 10.

Add 100 g fresh cream and beat without setting time/speed 3.5 until it sets watching from the measuring cup opening to avoid overbeating. Transfer to a bowl and refrigerate until needed. Meanwhile, continue with the assembly.

Insert butterfly. Spoon the ganache from the fridge to the bowl and beat 3 min/speed 3.5 to fluff it up.

Unmold the base of the tart, transfer to a serving platter and decorate the centre with the strawberries in the shape of a heart.

Place a bowl on mixing bowl lid and weigh inside 25 g apricot jam and 25 g water. Mix with a spoon and glaze the strawberries with a pastry brush.

Transfer the whipped cream to a pastry bag with a star-shaped nozzle and decorate the empty space between the strawberry heart and the dough edges. Garnish with 10 g chopped pistachios and serve.
