Chocolate crème brûlée

Place 9 egg yolks, 160 g sugar, and 1000 g fresh cream into mixing bowl and cook without measuring cup 32 min/80°C/speed 3.

Add 300 g dark chocolate and mix 2 min/speed 2. Transfer into a large bowl and set aside to cool down (see tip). Place in the refrigerator for a minimum 5 hours to firm up.

To serve, sprinkle top of brûlée with a layer of 100 g raw demerara sugar and caramelise using a blow torch, before serving immediately.

You can divide the crème brûlée into individual bowls before transferring it in the fridge.
