CARROT FRITTERS
Βήμα 1
Add in a small bowl 20gr chia seeds with 50gr of warm water. Leave aside for 15 minutes. A gel will be created. This is the chia 'egg'.

Put in the mixing bowl 10gr parsley leaves and chop

Put chopped parsley in a bowl and leave aside.

Put in the mixing bowl 300gr carrots cut in thick slices, 160gr potatoes cut in small pieces, 120gr brown onions cut in 4, 1 garlic clove and mix

Scrape down sides with the aid of spatula. Add in the mixing bowl 100gr oat flakes, 1 tablespoon curry powder, 1 tablespoon salt, 1/4 teaspoon ginger powder, 1 teaspoon sweet chilly flakes, 15gr nutritional yeast and 10gr ground flaxseeds. Mix

Scrape down sides with the aid of spatula and add in the mixing bowl the chopped parsley you left aside, 50gr water and 40gr olive oil. Mix again

Put the mixture in a big bowl and add inside the chia 'egg' you left aside. Stir well with a big spoon and put it in the fridge for half an hour.

Pre heat oven to 160 degrees and put parchment paper in a big baking tray.

Remove mixture from the fridge and mold 10 balls 55gr each. Put the balls on the baking tray and then press softly with a spoon to make them look as small burgers.

Bake on the one side for 25 minutes and 5 more minutes on the other side.

Serve immediately.

You can double the ingredients to make 20 fritters instead of 10.
