CARROT CAKE BARS

Put in the mixing bowl 160gr carrots cut in pieces and grate

Put grated carrots in a bowl and leave aside.

Put in the mixing bowl 160gr pitted dates and mix

Scrape down the sides using the aid of spatula and add in the mixing bowl 50gr melted coconut oil, 1 teaspoon vanilla extract, 80gr almond milk in room temperature and mix

Add in the mixing bowl 200gr almond flour, 60gr tapioca flour, 1 heaped teaspoon cinnamon, 3/4 teaspoon ground ginger, 1/4 teaspoon nutmeg and 1 teaspoon baking powder and mix

Add in the mixing bowl 50gr raisins and grated carrots which you left aside. Mix

Pre heat oven to 175 degrees.

Put parchment paper in a loaf tin

Put in the loaf tin the mixture and even the surface with the back of a spoon. Sprinkle on top with dessicated coconut.

Bake in the oven for 30 minutes on 175 degrees.

Let it cool and put the loaf tin in the fridge for half an hour. After cut in bars and store in an airtight container and save in the fridge.

2. You can substitute almond milk with any milk of your choice.
